In 2012 Cannaboe Confectionery are celebrating 10 years creating and supplying beautiful wedding cakes to couples in Leitrim and surrounding counties.

In 2012 Cannaboe Confectionery are celebrating 10 years creating and supplying beautiful wedding cakes to couples in Leitrim and surrounding counties.

Over these years Cannaboe Confectionery, managed by Sharon Sweeney, who also conducts courses in sugarcraft and cake decorating in Athlone, Carrick-on-Shannon, Boyle, Belturbet, Cavan, Mullingar and Ballinamore, have seen the traditional wedding cake of a three tier fruit declining. In its place are many varieties of delicious cakes which include moist chocolate cake with a chocolate buttercream filling, carrot and walnut cake with a luscious cream cheese filling, lemon or vanilla madeira cake with lemon or vanilla buttercream and the most popular at the moment - chocolate biscuit cake.

Cannaboe Confectionery have many years experience dealing with all the surrounding hotels including The Landmark, The Bush, Lough Rynn Castle and The Ramada in Leitrim, Kilronan Castle in Roscommon, Castledargan, Sligo Park, The Radisson, The Clarion, Cromleach Lodge and Markree Castle in Sligo, Slieve Russell, Kilmore, Cabra Castle in Cavan along with many other fantastic hotels further afield.

The modern alternative to the wedding cake are wedding cupcakes. These can be displayed on cupcake stands with either a top tier or a giant cupcake on top. The colours can be incorporated into the cupcake toppings and/or cupcake cases. There are many delicious flavours including chocolate, carrot & walnut, lemon, vanilla, coffee and the current favourite – banoffee.
