Marcin Brylewski, Chef at Kilronan Castle Estate & Spa headed to London this week for work experience in a Michelin Star Restaurant, Pollen Street Social.
This fantastic opportunity has been created by their Executive Chef, David Porter thanks to his many contacts in the culinary world. David joined the team in July and has literally been making ‘culinary’ waves since then, with new and improved menus for Evening Dining, Casual Bar Dining and Sunday Lunch not to mention a new and improved Festive Afternoon Tea with a special twist from the 12th of December.
Marcin Brylewski, has been working in the kitchen at Kilronan Castle since the doors opened in 2008 and since then his culinary passion has grown and developed. Now he is set to take it to the next level….this could be the first step towards a Michelin Star Restaurant in County Roscommon!
It is hoped this will be the first of many such training programmes, as at Kilronan Castle Estate & Spa they are dedicated to developing it's team members through training, reward and recognition.
Marcin started his training on Monday, 5th December under renowned Chef, Jason Atherton and will no doubt gain a wealth of advice and expertise in the art of fine dining which he can then bring back to the award winning, AA Rosette, Douglas Hyde Restaurant at Kilronan Castle Estate & Spa.
